This a a really lovely moist cake inspired by chef Shane Smith and even though you think there is a lot of soaking liquid for the cake please don’t be afraid to use it all
Preheat oven to 180C/160c Fan/ 350 – 375 F / Gas 4
Cream the butter and sugar together in a food mixer or large bowl. Add the eggs one by one, continually mixing. Add the zest from one of the oranges and the flour. Mix thoroughly to incorporate. Put into a greased and lined 2lb loaf tin. Bake for 50 minutes.
While the cake is baking make your soaking liquor by putting the juice of the two oranges in a small pot along with the cardamom pods. Heat for a few minutes until warm and remove from heat to infuse and cool.
Once your cake is baked remove from the oven and pour all the cooled liquid over the warm cake. Allow to completely cool before you remove from the tin. Serve with a nice cup of tea. Delicious for an afternoon treat. !
